Classic Hummus With Pesto

This hummus recipe is to die for! It is so fresh and earthy, and because it is a classic hummus recipe, you can easily change it into any other type of hummus you want! I will list a few of my favorite modifications below. Hummus is one of JJ and I’s favorite go to snacks as it is healthy and its so quick to make and keep in the fridge for a quick grab. I also love how you can have it with so many different things so that it never gets old. We usually have almost all if not all the ingredients needed on hand so its definitely budget friendly, which is a big plus for us!

Recipe:

2-4 cloves garlic (depending on taste)

1/2 cup tahini

2 Tablespoons olive oil

4-5 Tablespoons cold water

juice from 1 lemon (about 3-4 Tablespoons)

1/2 teaspoon cumin

1 teaspoon salt

1 15oz can garbanzo beans (strained & rinsed)

Directions:

  1. Add the garlic, tahini, olive oil, cold water, lemon juice, cumin, and salt to a food processor or blender, & blend on high for about 1 minute or so until completely combined.
  2. Add in the garbanzo beans, and blend on high for 3-4 minutes, or until a smooth consistency.
  3. Best served with carrots, cucumbers, mini bell peppers, crackers, pretzels or pita chips (I have a great and super easy pita chip recipe, check it out here.)! Or let me know what your favorite dipper is and I’ll have to try it. (:

Notes:

While traditional hummus is fantastic, being the foodie that I am I also love making different flavors to switch it up, here are a few of my favorites; diced carmelized onions (I blend in a few Tbsp’s full and then put a couple Tbsp’s in the middle of the prepared hummus), a couple spoonfuls of pesto sauce in the middle of the prepared hummus, roasted red peppers (blending a couple Tablespoons in, then a couple spoonfuls in the middle of the prepared hummus) and that’s just naming a few!

You can also take the time to roast the garlic before adding it in to give it a nice roasted flavor, and it will take a little bit of the garlic bite away, giving it an even smoother flavor as well!

If the hummus is too thick, add more cold water; only add a little bit at a time until you’ve reached the desired consistency.
