When I tell you these breakfast tacos are the biggest hit whenever I make them, that is an understatement! We will often just eat this scramble by itself in a bowl with the toppings, but it makes such great tacos as well! It has such a delicious and well balanced mixture.
Recipe:
1 pack bacon (12-16 slices)
2-4 cloves garlic
1 medium onion (white or yellow)
2 red potatoes
2 poblanos
2 serranos (optional)
6-8 eggs
1 can black beans (or pinto)
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon slap ya mama seasoning
salt & pepper to taste
oil for pan
corn tortillas
optional garnishes: crema (or sour cream), cilantro, avocado, queso fresco, salsa (your favorite kind, we like salsa verde), hot sauce (our favorite is tapatío)
Directions:
- Slice bacon and cook in a pan on medium high until fully cooked. Remove bacon from pan, set aside, and drain oil.
- In the same or new pan heat a couple Tablespoons oil (or use 2 Tablespoons bacon grease) on medium high heat. Add garlic and cook for 30 seconds. Next add in diced onions, diced red potatoes, diced poblanos, optional diced serranos, and stir to combine.
- Add all seasonings to pan and cook until potatoes are cooked all the way and everything has reached your desired doneness (about 15 minutes)
- Add this mixture to a large bowl and set aside. Next put a little oil in the pan again and cook your eggs scrambled seasoning with additional garlic powder, onion powder, salt & pepper to taste, adding the can of black beans (strained and rinsed) at the end just to warm them.
- Once eggs are finished add them to the big bowl with other cooked ingredients, mix everything to combined & serve over warmed corn tortillas or for lower carb eat by itself in a bowl.
- Add any desired toppings (our favorites are listed above) and enjoy!

As per usual, the seasoning amounts will vary based on taste preferences. If you like less or more please feel free to modify- the amounts listed are just how much we prefer.
I dice everything really small so it cooks well and gets crispy easier!
