Looking for a last minute meal to make for dinner? This pita pizza is just that, coming together in 15-20 minutes and so tasty you’d never even know how quick it is! We make several variations of pita pizzas in our house, this is just one of the many that we’ve grown to love over the years. You can certainly modify the toppings to your choosing and liking, we picked these because the flavors all go so well together especially with the pesto sauce! Recipe:
2 pitas
Olive oil
1/4-1/2 cup pesto (more if you like saucy)
1/4 cup kalamata olives (strained & sliced)
1/4 cup mushrooms (washed)
1/4 cup sun dried tomatoes (strained well)
1/4 cup red onions (diced)
1/4 cup artichokes (strained & sliced)
12 slices mozzarella (6 per pizza)
Fresh basil for garnish
Optional other garnishes: Red pepper flakes & sriracha drizzled on top, as well as fresh parmesan or feta are our favorites!
Directions:
1. Preheat oven to 375, and place pitas on a foil lined cookie sheet, coating each one with a Tablespoon or so of olive oil, rub or brush oil to coat the naan/pita entirely, & place in oven for just a few minutes to warm up before hand.
2. Meanwhile, in a mixing bowl, combine Kalamata olives, mushrooms, sundried tomatoes, artichokes, and red onions. Mix well & set aside.
3. Once pitas are out of the oven, using a spoon or marinade brush; rub pesto all over top of both pitas, leaving about a quarter inch edge around the sides as your crust, next pour the topping mixture equally over both naan/pitas.
4. Next, place mozzarella equally around the pizza (should fit about 6 slices of mozzarella) & place in oven cooking for about 10-15 minutes or until cheese is melted & they have reached your desired doneness
5. Once removed from oven, garnish with fresh basil & optional red pepper flakes, parmesan, & our favorite feta and/or sriracha!
Notes:
This recipe makes 2 naan/pita pizzas which for us is about 1 naan/pita pizza per person! You can easily expand this if you’re making it for more people
If you don’t like one of the toppings, simply leave it out or replace it with something you like better!
