Pancakes are one of those breakfast staples that are so good and can be done so many different ways! My favorite thing about pancakes, is they are so easy to make from scratch- and usually you have most (if not all) of the ingredients on hand. I haven’t bought a box of pancake mix in years! It also comes together in just minutes, and it’s so much better than anything you can buy on the shelf, and without spending crazy prices for the good stuff. Recipe:
1 1/2 cup flour
3 1/2 tsp baking powder
1 tsp salt
3 Tablespoons sugar
1 1/4 cup milk
1 egg
3 Tablespoon melted butter
1 Tablespoon vanilla extract
Optional garnishes: maple syrup, Nutella, peanut butter, jelly, chocolate chips, bananas, blueberries, strawberries, or your favorite topping!
Directions:
- Combine flour, baking powder, salt and sugar together in a large bowl, mix until well combined and set aside
- Next, add your egg to your measured out milk and whisk together to combine the egg into the milk. Then pour this mixture over your dry ingredients bowl. Mix just to combined (don’t over mix)
- Then, add your butter and vanilla to the pancake mixture (butter melted down first in a small bowl), and stir these ingredients in just enough to mix together (don’t over mix, you will end up with very flat pancakes)
- Next, heat a medium pan or a skillet to medium heat, and spray with cooking spray, or rub butter all over. (For best results, turn to medium low once preheated and take your time cooking them to prevent burning) Using a measuring cup or ladle get about a half cup of mixture per pancake and cook as many as can fit at a time leaving about an inch of space between them.
- Once they begin to bubble (about 3-5 minutes) you can flip them using a spatula, and cook just a few minutes on the other side to finish.
- Garnish with your favorite toppings like maple syrup (get my recipe for maple syrup here), Nutella, peanut butter, whipped cream, fruit like blueberries, bananas, or strawberries are delicious too! Also serving with bacon or sausage to give a sweet and savory combo is a great addition!
